Everyday Porridge- 2 ways

A good and simple porridge is an essential staple- so much so that I don’t really believe it calls for a recipe…
However, here are 2 that I love and make for myself on a weekly basis.

Serves 2

Prep time: 2 mins

Cook time: 5 minutes

Banana, PB and Chia

2 cups porridge oats/ jumbo oats

1 tbsp chia seeds

1 pinch of salt

3 cups water, 1 cup plant milk

1 large or 2 small bananas

2 tbsp maple syrup/agave syrup

4 tbsp crunchy peanut butter

Method

  1. Measure out the oats into a medium saucepan. Add the chia seeds and the pinch of salt.
  2. Add the liquid and stir over a medium heat.
  3. Slice the bananas into the porridge (I like it when they cook with and melt into the porridge)
  4. When the desired consistency is reached (depending on the type of oats and the heat), remove the pan from the heat, and stir in the maple syrup.
  5. Spoon into bowls, and dollop on the peanut butter.

Apple, Cinnamon and Flax

2 small apples/1 large apple

1 tsp ground cinnamon

2 cups porridge oats/ jumbo oats

1 tbsp milled flaxseed

1 pinch salt

3 cups water, 1 cup plant milk

2 tbsp maple syrup/agave syrup

Method

  1. Cut the apple(s) into quarters, remove the core. Then roughly cut into chunks, place these into a medium saucepan with a splash of water and the ground cinnamon. Cook for 3 minutes on a medium heat until the apples have softened.
  2. Now add the oats to the pan, along with the flaxseed, salt and the liquid.
  3. Cook the porridge on medium heat until the desired consistency is reached (about 5 minutes depending on type of oats)
  4. Spoon into bowls and drizzle over the syrup.
