Our 2nd time at Peterley’s Xmas Market. Things went even better than the 1st time. We had learnt a lot by now, and employed some extra paid staff to share the workload with. This worked brilliantly and everyone seemed to enjoy themselves, it also meant the managers had a little more break-time. We had also developed our batter recipe to be more flavourful and crunchier. We served loads of Popcorn Cauliflower, using almost 180 heads of cauli.
